That is the beginning of Hokkaido Ramen Santouka.

From the moment it hits your taste buds, the gentle flavor becomes a rich taste of ramen that leaves you wanting more. Almost 40 years ago, Santouka’s ambition to open a restaurant and create delicious ramen quickly drew customers for his shio ramen – served with a small, pickled plum in a unique round bowl. Another popular dish, the white tonkotsu (pork bone) soup was iteratively refined through trial and error. Its mild, gentle flavor is delicious to the last drop. Though the company was only founded in March 1988, a mere four months later the soup had already received rave reviews from Hatanaka's family for its amazing quality. Yet, Santouka had a humble beginning. He started with a single restaurant in Asahikawa, Hokkaido that sat 9 people and had only one item on the menu: shio (salt) ramen. Now, we invite you to try our delicious ramen that we are sure you will enjoy.

This is the wish of the founder, part of every small bowl of ramen.

The bowls we use to serve our ramen were specially ordered by our founder. Their thickness prevents the soup from cooling, so that the aroma and delicious flavors remain intact until you lift the last spoonful to your mouth. The unusual color of the donburi is a beloved symbol of Hokkaido Ramen Santouka’s origin story.

 

The tonkotsu soup is carefully cooked at a low temperature for 20 hours and then seasoned with just the right amount of salt to make it delicious to the last drop. Our philosophy is to bring out the delicious flavor of our ingredients to the greatest extent possible, ensuring our soups retain their mild, comforting flavor. This is why our ramen can be served to small children without any worries.

We want to deliver Hokkaido Ramen Santouka overseas,
not just in Japan.

Santouka's soup is made from scratch and by hand at all its restaurants, both in Japan and abroad.We are committed to sticking to our core ingredients, production methods, and using minimal salt to continue serving “family friendly, delicious, and healthy ramen.”


Like food parents give their children, we strive and pour our love into our ramen. In keeping with the spirit of Santouka at the time of its founding, we aim to be a ramen restaurant that will be loved forever by people around the world. We will never stop delivering our consistent flavor.
